Starter: Chawanmushi or Japanese egg custard

Very easy to make, Chawanmushi is emblematic of traditional Japanese cuisine. It is traditionally cooked in a tea bowl, and is generally presented as a hot starter. We have revisited the recipe so that it is very affordable to make in France, to be enjoyed without moderation!

Ingredients for 2 people:

  • Egg
  • Either seafood depending on the arrival (shrimp, scallops)
  • Either chicken fillet
  • Shiitake mushroom, or other mushrooms
  • Chicken broth
  • Soy Sauce
  • Optional: sesame oil
  1. Break the eggs into a salad bowl and mix them gently, without making them foam (this is important).
  2. Pour the broth and 1 teaspoon of soy sauce into the eggs while mixing. Adjust the seasoning with salt and pepper.
  3. Pass the mixture through a sieve to ensure it is perfectly smooth.
  4. Take 4 small Tenmoku cups, put in each two slices of mushroom and a seafood or small chicken cubes. Fill each bowl with the egg mixture.
  5. Turn on the steamer, once hot, put the bowls and heat over low heat for about 15 minutes. Test the cooking by sticking a toothpick into a chawan mushi, if it comes out clean, it's cooked. It's ready! You can chop the spring onion and add it on top when serving. A few drops of sesame oil are also highly recommended.

Ingredients for 2 people:

  • 40 g flour
  • 20 g almond powder
  • 1 teaspoon of matcha tea powder
  • 25 g caster sugar
  • 1 pinch of baking soda (or baking powder)
  • 1 egg
  • 30 g of fromage blanc
  1. In a salad bowl, mix the flour and almond powder with the sugar, bicarbonate and matcha.
  2. Add the egg and the fromage blanc then mix well until you obtain a smooth paste.
  3. Divide the mixture into two Tenmoku cups.
  4. Cook for 1 minute 30 seconds in the microwave.
  5. Enjoy immediately.
